Crispy Homemade French Fries

 If there were one salty snack that I would save in a salty snack apocalypse it might just be french fries! If you’re like me, you like them as CRISPY as possible, without sacrificing that fluffy interior. Another great thing about french fries is their versatility as a side dish. Think about all the combinations – smashburgers, a juicy steak, fried fish, or even a nice Caesar salad. Ingredients

  • 4-6 Russet potatoes, about 3 pounds

  • Neutral Oil for frying (I like vegetable, peanut, or avocado oil)

  • Kosher salt

Directions

  1. Wash the outside of your potatoes and thoroughly dry. Cut into ¼ inch matchsticks with a knife or a french fry cutter. Whatever you choose, the fries should be cut to a similar size so they cook evenly.

  2. Place the fries in a bowl of cold water to wash the starch off. Drain the cloudy liquid and wash another 2 or 3 times until the water drains as clear as possible. After the last drain, place the potatoes on a layer of paper towels and pat thoroughly until dry.

  3. Meanwhile, fill a deep pot or fryer with 3-4 inches of oil. Heat the oil to 325-350ºF

  4. Working in batches, place a handful of the potatoes in the pot and cook until fork tender and lightly golden, about 2-3 minutes. Remove the “par-cooked” fries from the oil and drain on a rack or a layer of paper towels. Repeat the process with the remaining potatoes until they are all “par-cooked”

  5. Increase the heat of the oil to 400 degrees F. Once the oil is to temp, place a handful of potatoes back into the pot or fryer and cook for an additional 2-3 minutes or until golden brown and crispy. Immediately place the fries into a bowl and sprinkle with salt to taste. Serve immediately.

Tips

  • Other seasonings you can use can also use are: Garlic salt or cajun seasoning

  • Tossing your fries in truffle oil or melted beef tallow will really set ‘em off!
