Toasted Coconut Rice

Ingredients:

  • 1 Tbsp. Coconut oil

  • 1 Cup White Rice or Jasmine Rice

  • 1 14 oz. Can coconut milk

  • 1 Cup Water

  • 2 tsp. Sugar

  • 1 tsp. Kosher salt

  • Parsley or cilantro, chopped, for garnish

Directions:

  1. In a medium pot melt the coconut oil over medium-high heat. Add the rice and continuously stir to coat the rice grains in oil until the rice is lightly browned and has a toasty aroma, about 5 minutes. Remove the rice to a bowl and place the pot back over the flame, lowering the heat to medium-low. To the pot add the coconut milk, water, sugar, and salt. Cook, stirring occasionally, until the milk is smooth and the sugar is dissolved, about 2 minutes.

  2. Next, add the toasted rice and turn the heat to high -- just until the liquid begins to boil. Cover with a lid, and reduce the heat to low. Let simmer, covered, for 15-18 minutes, until the rice is tender and the liquid has dissipated. Next, shut off the heat and keep the lid on for 5 minutes to let the rice steam. Remove the lid and let the rice sit and cool for another 5 minutes before fluffing with a fork and serving immediately. Garnish each serving with freshly chopped parsley or cilantro.

Tips:

  • For sweeter rice opt for 1 Tbsp. of sugar instead!
