Roasted Veggies + Hot Honey Drizzle
There’s this notion that says cooking vegetables reduces their nutritional value… My response to that notion - do we really care?

Serves: 2-4
Ingredients:
1 lb. of brussels sprouts, trimmed, halved (quartered if large)
3 Large carrots, peeled, medium diced
¼ Cup Olive oil
Kosher salt
Fresh ground black pepper
½ Cup honey
¼ Cup apple cider vinegar (however, any kind will do)
1 Habanero chile or scotch bonnet pepper, halved
Directions:
Place a rack in the center of the oven and preheat to 375 degrees Fahrenheit. Prepare a large baking sheet by placing it in the oven as it preheats.
To a large bowl, add the brussels sprouts and carrots. Drizzle with olive oil and toss to coat. Season with 1 Tbsp. of kosher salt, and a few cracks of black pepper. Toss to combine. Remove the prepared baking sheet from the oven and spread the seasoned veggies in one even layer, leaving as much space as possible between each vegetable. Place them back into the oven and roast for about 30 minutes flipping and turning the vegetables halfway in between, and rotating the baking sheet horizontally. Once the vegetables are brown and fork tender, remove from the oven and set aside to cool.
Meanwhile, place a small saucepan over medium heat and add the honey and the habanero chile. Cook, untouched, until it thins and turns a deep shade of golden brown, about 3 minutes. Deglaze the pan by slowly adding the vinegar. Continue to cook by swirling the pan occasionally until the sauce thickens slightly and resembles the consistency of a warm maple syrup, about 10 minutes. Shut off the heat and pick out the habanero pepper. Season with a touch of salt, and a few cracks of black pepper.
Using a metal spoon, evenly drizzle the gastrique sauce over the cooling veggies. Allow to cool for a few minutes and serve!
Tips:
Using rubber utensils here is a mistake. The rubber reacts with the impurities in the honey and can cause clumping
Nothing is worse than a SUGAR BURN! Be extra careful when things heat up.
