Bourbon glazed Chicken Wings
There’s really few things better than a well-made batch of fried chicken wings. This maple bourbon glaze has been a staple on my company’s private dining menu for almost 2 years now, and they HIT… Every time.

Serves: 2-4 people
Ingredients:
Approx. 1 lb. party wings
Kosher salt
Neutral Oil
Ingredients: For the Bourbon Glaze
½ cup maple syrup
½ cup bourbon
¼ cup Ketchup
¼ cup brown sugar
4 teaspoons Hey Grill Hey Sweet Rub
4 teaspoons apple cider vinegar
Ingredients: For the Ranch:
½ cup buttermilk
⅓ cup sour cream
¼ cup mayonnaise, such as Hellmann's or Duke's
1 ½ tsp. Worcestershire Sauce, optional
1-2 garlic cloves, grated
1 tsp. salt
½ tsp. Freshly ground black pepper
½ tsp. Granulated onion
1 ½ tsp. dried dill
1/4 cup finely chopped fresh chives
2 teaspoons fresh lemon juice
Directions – Bourbon Glaze
Combine all ingredients in a medium saucepan over medium heat and bring to a boil.
Reduce the heat to low and simmer for 15-20 mins until the glaze reaches a syrupy consistency.
Use right away or store in a glass jar. It will last at least 1 week tightly sealed in the refrigerator.

Combine all ingredients in a medium-sized bowl and whisk to combine

In a large bowl, add the wings and a generous pinch of salt. Toss to combine and cover and refrigerate them for at least an hour or at most overnight.
When you are ready to fry, place the seasoned wings in a single layer on a baking sheet lined with paper towels and pat them dry. Heat a pot of oil to 300ºF and fry the wings for 3-5 minutes, just until they are a pale yellow and cooked all the way through. Remove the wings from the oil and place them on a new set of paper towels. Allow them to rest for at least 10 minutes.
Crank the heat of the oil up to 375ºF and fry the wings a second time for 2-4 minutes or until they are golden brown and crispy.
Toss the wings in a thin layer of bourbon glaze and serve with fresh parsley, ranch, and a cool beverage!
